What is cauliflower rice?

Cauliflower rice — "caulirice" for short — is simply raw cauliflower grated or pulsed into small, rice-sized grains, then lightly cooked. No special equipment needed: a box grater or a quick blitz in a food processor turns a head of cauliflower into a fluffy, rice-like base. It's naturally low-carb, low-calorie, gluten-free, and a solid source of vitamin C and fiber.

How to cook it fluffy, not mushy

The number-one complaint about cauliflower rice — that it's wet and mushy — comes from overcooking. Cauliflower holds a lot of water, so the goal is to drive moisture off, not add it:

Pro move: for fried-rice dishes, get the pan really hot and let the cauliflower char slightly before adding anything wet — that's what gives it real "sinangag" flavor instead of tasting steamed.

Yes — cook it, cool it, and refrigerate for a few days, or freeze riced (raw) cauliflower and cook straight from frozen.
